The best chocolate brownie recipe



Who doesn’t love a brownie?


Brownies are perfect for all occasions from a birthday gift, to a late night treat on the sofa served warm with ice cream! Brownies are so versatile, once you have a simple chocolate brownie recipe, you can add extra ingredients such as nuts for crunch, white chocolate to add pops of sweetness, or your favourite sauces and spreads, from Nutella and Lotus, to everyone’s favourite, salted caramel. You can simply enjoy them yourself or pack and wrap for delicious homemade brownie gifts.


What makes a perfect brownie?


For me, you must use the best chocolate you can afford. A blend of at least 70% dark chocolate and good quality milk chocolate make a perfect brownie blend for my taste. I love the rich chocolate taste that makes each mouthful feel so indulgent and satisfying.






Ingredients


175g salted butter

80g 70% dark chocolate

40g milk chocolate

400 g sugar

3 eggs

80g cocoa

125g plain flour

½ tsp vanilla extract


Preheat your oven to 170 degrees & Line a baking tin 9 x 13 inches with foil (shiny side up) and baking parchment

Melt the butter and chocolate, allow to cool slightly and then whisk in the sugar


In a separate bowl, mix the eggs and vanilla extract.


Add the chocolate mixture to the eggs and whisk.


Add the flour and cocoa and mix until all the ingredients are well combined.


Pour the mixture into the lined baking tin and spread evenly.


Bake for 18 minutes and then check to see whether the brownies are cooked with a toothpick or skewer.


Some of the moist crumbs of brownie mixture should cling to the toothpick. You are NOT looking for a clean toothpick!


Allow the brownie to cool and serve.









Top tips

  • I always pop my brownie in the fridge for a few hours once they are cooled, that way, you get a much neater cut. Once cut you can freeze the brownies for up to 3 months, so you can enjoy them when you get that brownie craving.

  • I always warm my brownie for 10 seconds in the microwave and add a scoop of vanilla ice cream to turn the brownies into a perfect dessert.
