Who doesn’t love gingerbread? The aroma’s that fill my kitchen when baking this blondie makes my heart warm and take me back to my childhood baking with Nan Freda. For Bonfire night we always baked gingerbread parkin and then in preparation for Christmas the gingerbread men cutters came out to play!
Ginger bread was one of the original cakes which everyone made at home from their own special recipes, and remained one of the most popular flavours until chocolate became cheaper and more affordable and ginger bread was left a little behind, however, the super moist, delicately spiced ingredients rich with butterscotch and caramel flavours are really a festive classic which simply cannot be ignored.
